Finally, for everyone on the east coast, the weather is starting to resemble something that looks like spring (since it hasn't snowed in the past few weeks). I created this recipe with the intention of taking it to picnics on the lawn or a quick lunch on the park bench. It's super easy, healthy, and my picky tast tester father even liked it so you should too.
I created a healthy mayo substitute
I shredded some chicken
I diced some pears
I added a touch of salt and pepper
Enjoy it plain or on a slice of toast
RECIPE
serves 2
ingredients
1 teaspoon minced Rosemary
1 teaspoon salt
black pepper to taste
1/2 pair chopped
3 tablespoon fat-free plain Greek yogurt
2 rotisserie chicken breasts, shredded
directions
1. Combine yogurt, rosemary, and salt in a bowl
2. Toss shredded chicken with yogurt mixture then fold in the chopped pear carefully
3. Add pepper to taste
Sounds so tasty! Must cook today for my late lunch.
